Xanthan Gum is an artificial sweetener that is widely used in many foods. It has been extensively used as an artificial sweetener in both commercial and home-prepared foods. It is an extremely popular thickener and stabilizer for food and drinks due to its usefulness as an artificial preservative. For this reason, it is often consumed in place of sugar or other natural thickeners, such as lactose, cane sugar, and maple syrups. The gel form of Xanthan Gum is used mostly for baking purposes.

Recently, scientists reported that they had succeeded in showing that xanthan gum can have a beneficial effect in patients with intestinal infections, such as irritable bowel syndrome. The report said that patients taking xanthan gum had a significant reduction in the risk of developing diarrhea, which is caused by the overuse of antibiotics. Also, patients taking soluble fibers in the form of xanthan gum had a significant reduction in the risk of developing colon cancer, according to another study. All these results come from a report published on May 8 in the journal Gastroenterology.

Another study on the effectiveness of xanthan gum in raising the levels of soluble fiber in the body was done by researchers at the University of California - Davis. They found that the gum could lower the levels of FOS (fiber ingredient) in the blood. The levels of FOS in the bloodstream are considered to be indicators for diabetes. Recently, in February 2020, Jungbunzlauer announced to expand its xanthan gum production in its manufacturing facility in Pernhofen, Austria.
