Instant coffee, also known as soluble coffee, powdered coffee, instant coffee powder, and instant coffee crystals, is a thick, rich-textured drink derived directly from whole brewed coffee beans that allow individuals to quickly brew hot coffee within several minutes by adding hot milk or hot water to the powdered crystals or powder and stirring thoroughly. Recently, in February 2020, Nestle launched Starbucks premium instant (soluble) coffee.


Two ways of preparing instant coffee concentrate are extraction and freeze-drying. In both the process of extraction and freeze-drying, water is sprayed onto the coffee grounds, which are then steeped in hot water for a few minutes, forcing the coffee grinds deep into the liquid. This creates a coffee concentrate. An extraction process uses a pressurized bottle, like the kind used for hot chocolate, to "pour" the concentrate into a container, which is then heated. Freeze-drying uses liquid nitrogen to "freeze" the concentrate.
